Orange Blossom Honey is prized for its beautiful sweet flavor and aroma.  If you ever have the opportunity to drive through orange country in Southern California it is an experience you will not soon forget.  You may have experienced something similar at Disney Land in their ride "Soaring Over California".  The sweet scent of orange blossoms fills the air like a hug from the local citrus trees.  I know this sounds a bit cheesy but it is unlike any other smell except the aroma and flavor of orange blossom honey.  

Usually this honey is a blend of pollens from several types of citrus plants, orange blossom honey is unique.  Light amber to white in color it has a sweet floral flavor with citrus notes that is absolutely divine in tea both hot and cold as well as an ingredient in marinades, dressings, sweetener substitutes and more.  This honey is predominantly produced in more tropical climates in California and Florida.  The lighter the color and the milder the flavor comes in years when there is a large orange harvest because there is less of a chance of the honey having other pollens mixed in.  

If you have never tried a pure raw honey this is the type I would recommend.  It is a treat whether you use it in recipes or just spread it on a piece of toast in the morning.

When buying honey you want to look for a raw honey that has not been processed at all so that you can be sure that none of the aromatic and flavor qualities have been diluted or destroyed by adding heat and/or straining the honey.  

For the honey enthusiast to someone who has never strayed from processed clover honey at the local grocer I recommend orange blossom honey.
