The different names for the honey simply identifies the flower that the bees gathered the nectar and pollen to make the honey.  Each type of honey has it's own flavor charicteristics.  Below is a list of the different varieties that we carry and a description of the flavor profile of each.

Avocado:  Often a misunderstood honey because people assume that it tastes like avocado.  In fact it is a full bodied, darker honey that has a hint of molasses and butter notes.  Great in oatmeal or coffee.

Brazilian Peppertree:  Originated in South America this honey is amber in color with a rich vibrant flavor.  Blooms in late summer.  Nice creamy texture.

Buckwheat:  One of the darkest honey's available and surprisingly hard to find some times.  It has a sharp but pleasing flavor that is enjoyed by honey enthusiasts.  It has been found to contain more antioxidant compounds than lighter colored honey's.

Eucalyptus:  Often remarked that it is not as sweet as other honeys and has a butterscotch quality to it.  Hails from California and can have a wider range of colors due to the wide range of species of eucalyptus plants.  Great to sweeten up a cup of tea.

Manuka:  Hails from the great nation of New Zealand.  It is a product of the tea tree bush that grows on the coast.  Usually referred to as medical grade honey the antibacterial qualities of this honey are widely recognized.  UMF refers to the Unique Manuka Factor which is a rating system to help the consumer know how high the antibacterial activity is in the honey.  The UMF number you should buy depends on what you will be using it for.  Please see the manuka honey page for more in depth information on this product.

Orange Blossom:  Usually a mixture of citrus plants create the nectar that the bees us in making this sweet, light in color, mild honey.  It has a fresh fruity scent and is a great sweetener in tea.

Sage:  Primarily produced in California by the black sage that grows in California's mountains.  Light in color with an elegant floral aftertaste.  Unlike other raw honeys this honey will never crystallize.

Washington Raspberry:  Completely natural honey straight from the raspberry blossoms.  Light in color but with a stronger kick than sage or orange blossom varieties.

Wildflower:  Made from a wide variety of flowers can range in color from medium to dark with a range of flavors dependent on what is in bloom from year to year.

 

There are 2 types of honey processing featured with the honey we carry and are identified in the name. 

Raw honey is defined as

  • not being warmed to more than 100 degrees so as not to disturb the delicate flavors and color.
  • the wax is just simply skimmed off the top of the honey container so the honey is never filtered or strained so you get all the fine particles of pollen and propolis which add to the nutritional value of honey.

Cold packed honey

  • Instead of using an automatic bottler this thick cold honey is hand packed into wide mouth containers and will crystallize over time.  To un-crystallize the honey gently warm.
